Mastering microdynamics in milk multiphase systems

Multiphase soft materials are present in many biological tissues.  Most imaging studies so far  are challenged by low phase contrast,  resolution, and difficulty in distinguishing between different components in the various phases.  Furthermore,  there are also difficulties in distinguishing between different structures within the phase, as for example,  lipid crystalline phases in lipid structures,  or self assembled polysaccharides in aqueous solutions.   

There is a lack of understanding of synergistic or antagonistic phenomena taking place at the interfaces and to oversimplifying of the effect of each component and the importance of phase heterogeneities. This project will focus on complex soft materials using well understood and formulated model systems,  which will be carefully modified based on changes in environmental conditions and processing history.   Leveraging on recent developments in droplet formation (microfluidics) and characterization (droplet morphometry) in combination with advanced spectroscopy imaging (soft X-ray, X-ray imaging, FT-IR and Raman Imaging) technologies, this project aims to study in situ, with time-resolved and within spatial resolution, the structure formation of emulsion systems containing other phases,  such as air bubbles and water in water domains. 

 

The project will aim at studying how interfacial interactions, distributions and phase separations may be imaged, to create  a toolbox for observation of complex biological materials, and being able to study the crucial steps leading to stability/instability in many complex soft materials and delivery systems.
